				Ingredients
				
          8 fillets very fresh whiting, sliced 
Juice from 2 limes 
Juice from 2 lemons 
Juice from 1 orange 
1 celery heart, chopped 
1 small cucumber, sliced 
1 red capsicum, chopped 
1 red chilli, chopped 
1 small bunch coriander, chopped 
3 spring onions, chopped 
2 ripe tomatoes, skinned, seeded and diced 
Sea salt 
Pepper 
Drizzle of olive oil
				
				
				Method
				  1 Place the whiting in a bowl and cover with the juices, season with salt and pepper and leave for 5-10 minutes
2 In another bowl mix celery, cucumber, capsicum, chilli, coriander, spring onion and tomatoes
3 Once the fish is just cooked through, but still a little raw in the middle, add to the other bowl with all the juices
4 Mix quickly, adjust seasoning and arrange on a plate with a drizzle of olive oil
