Watermelon crush
Serves

Ingredients
½ cup castor sugar
300mL water
750g watermelon flesh, seeds removed
2 tablespoons lemon juice
Method
Put sugar and water in a saucepan and bring to the boil for 5 minutes then cool
Puree watermelon flesh in a blender
Add sugar syrup and lemon juice and mix well
Put into a tray and place in freezer
When the mixture starts to set, remove from freezer and blend well or mix it with a fork, then place it back in the freezer
Remove from freezer 15 minutes prior to serving
Spoon into serving glasses
