Strawberries with meringue and yoghurt

Ingredients
- 500g natural yoghurt
- 40g icing sugar
- 1 teaspoon vanilla extract
- 1 punnet strawberries
- 30g icing sugar
- 16-20 small meringues
Method
- Place the yoghurt into a sieve lined with a clean chux and let it drain for an hour
- Mix with sifted icing sugar and vanilla extract
- Wash and hull the strawberries
- Puree in a kitchen whizz or blender and then pass through a sieve to remove the seeds
- Mix with the sifted icing sugar and vanilla extract
- Wash and hull the next punnet of strawberries and cut into quarters
- Layer the fresh strawberries with the yoghurt, strawberry sauce and crushed meringues, a good job for the kids, and serve
