Southern Fried Chicken

Ingredients
1 x 1.5kg chicken
Sea salt to taste
3/4 bunch thyme
3/4 bunch oregano
1 tablespoon ground white pepper
1 tablespoon ground black pepper
1 tablespoon paprika
1lt butter milk
500g plain flour
350g bread crumbs
80g corn flour
Vegetable oil for deep frying
Fresh limes
Method
Chop chicken into pieces, ensuring each piece has a bone on it
Season chicken well with sea salt, thyme, oregano, black pepper, white pepper, paprika and butter milk
Leave overnight
The following day mix the flour, bread crumbs and corn flour and drain the chicken
Mix the chicken with the crumb mix in a plastic bag and allow to sit for a few minutes, then deep fry in oil until golden and cooked through
Season with more sea salt and serve with fresh lime
