Pork and beansprout salad

Ingredients
2 cloves garlic
30ml peanut oil
120g pork mince
250g beansprouts
1 bunch garlic chives
15ml fish sauce
pinch freshly ground white pepper
1 teaspoon white sugar
½ bunch coriander leaves
Method
Peel and finely dice the garlic
Heat the oil in a wok or large frypan, add the garlic and fry until golden
Add the pork mince and stir over a high heat for 4-5 minutes until the pork is cooked
Add the beansprouts, chopped garlic chives, fish sauce, pepper and sugar and stir fry until beansprouts start to wilt
Serve with chopped coriander leaves
