Peppered steak with mushroom sauce and steamed asparagus

Ingredients
1 small brown onion
1 clove garlic
75g butter
250g mushrooms
2 tablespoons Dijon mustard
1 teaspoon lemon juice
1 tablespoon Worcestershire sauce
100ml cream
2 tablespoons chopped parsley
600g beef fillet, trimmed
and cut into 8 slices
salt and freshly ground black pepper
50g butter
Method
Peel and finely dice onion and garlic and slice mushrooms
Heat a large frypan over medium heat and add butter
Sauté onion and garlic until soft, add mushrooms, cook until golden
Add mustard, lemon juice, Worcestershire and cream
Simmer for 3-4 minutes, add parsley and keep warm
Season the beef slices with a little salt and lots of pepper
Heat a large frypan over a medium to high heat
Add butter and sear beef until cooked to your liking
Remove from pan and keep in a warm place for a few minutes to rest
Serve with warm mushroom sauce, boiled baby potatoes and steamed asparagus
