Penne with zucchini, broccoli and parmesan

Ingredients
- 2 cloves garlic
- 1 large red chilli
- 100ml olive oil
- 6-8 anchovy fillets
- 300g broccoli
- 4 small zucchinis
- freshly ground black pepper
- 400g penne pasta
- freshly grated parmesan
- rocket
Method
- Peel and finely slice the garlic
- Slice the chilli
- Heat a large frypan over a medium heat
- Add the oil, garlic, chilli and anchovies and cook until soft
- Cut the broccoli into florets and cook in boiling water until just soft
- Grate the zucchini and add both the cooked broccoli and zucchini to the frypan
- Simmer in the oil until all is soft and a sauce like consistency
- Season with black pepper and keep warm
- In a large pot of boiling water cook pasta until al dente
- Drain and toss through the warm sauce
- Serve with lots of freshly grated parmesan and a rocket salad
