Marinated tuna with red onion sauce

Ingredients
4 tuna steaks, each about 150g
2 cloves garlic
200ml dry sherry (optional)
4 Spanish onions
75ml olive oil
salt and freshly ground black pepper
25ml olive oil
½ lemon, juiced
Method
Place the tuna in a dish and pour over 100ml of the sherry
Peel and finely dice the garlic, add to the tuna and allow to marinate for at least an hour before cooking
Peel and finely slice the red onions
Heat the oil in a large frypan
Add the onions, salt and pepper and cook over a low heat for 20-30 minutes until golden and sweet
Drain the marinade from the tuna and add it to the onions with the rest of the sherry and simmer for 4-5 minutes until sauce consistency
Keep warm
Heat the rest of the olive oil in a large frypan and sear the drained tuna for a minute or two on each side until cooked as desired
Serve the tuna with the sauce poured over the top
