Chinese barbecued pork spare ribs
Serves
Serves 8 - 10 as part of a barbecue selection

Ingredients
4 spring onions
2cm piece fresh ginger
100ml light soy
50ml rice vinegar
100g hoisin sauce
25g white sugar
1.5kg pork spare ribs
Method
Peel and dice the spring onions and ginger
Mix with the rest of the ingredients and allow to marinate overnight
Cook on a hot barbecue, drizzling over the excess marinade as the ribs are cooking until they are caramelised and cooked through
Your barbecue will need a good clean after cooking the ribs but always remember to leave the barbecue well oiled after each use
