Spaghetti with chicken, broccolini and prosciutto

Ingredients
6 slices prosciutto
60ml olive oil
2 cloves garlic, minced
1 brown onion, sliced
500g chicken breast, cut in strips
200ml chicken stock
25g butter
500g spaghetti
1 bunch broccolini, cut into 5 cm pieces
Grated parmesan
Freshly cracked black pepper
Method
Place 2 slices of the prosciutto onto an oven tray and crisp in a moderate oven for 3-4 minutes
Cut the other 4 slices into strips
Heat the oil in a large fry pan and sauté the garlic and onion
Add the chicken and prosciutto strips and sauté for 3-4 minutes
Add the chicken stock and butter and simmer for 4-5 minutes
Cook the spaghetti in a pot of boiling water and add the broccolini about 3 minutes before the spaghetti is cooked
Drain and toss with the chicken sauce
Serve with shards of the crisp prosciutto, parmesan and black pepper
