Ingredients
1 brown onion
½ bunch parsley
¼ bunch basil
¼ bunch sage
olive oil for cooking
salt and freshly ground pepper
½ cup breadcrumbs
125g roasted macadamia nuts
1.5kg turkey breast
2 bunches asparagus
Method
- Preheat oven to 200°C
- To make the stuffing, peel and finely dice the onions
- Finely chop the herbs
- Heat the olive oil in a large frying pan and sauté the onions
- Add the chopped herbs and the salt and pepper
- Sauté for a few more minutes then add the breadcrumbs and chopped macadamias
- Sauté until well combined
- Allow to cool before using as a stuffing
- To stuff the turkey, make a slit along the length of the breast almost through to the other side, fill the cavity with the stuffing and then roll the breast up and truss or tie with kitchen string
- Place the turkey onto a roasting rack in a baking tray and roast for about 1 – 1 and ½ hours until turkey is cooked
- Slice and serve with steamed asparagus and condiments, such as cranberry sauce
