Penne with zucchini, broccoli and parmesan

Ingredients
2 cloves garlic
1 large red chilli
100ml olive oil
6-8 anchovy fillets
300g broccoli
4 small zucchinis
freshly ground black pepper
400g penne pasta
freshly grated parmesan
rocket
Method
Peel and finely slice the garlic
Slice the chilli
Heat a large frypan over a medium heat
Add the oil, garlic, chilli and anchovies and cook until soft
Cut the broccoli into florets and cook in boiling water until just soft
Grate the zucchini and add both the cooked broccoli and zucchini to the frypan
Simmer in the oil until all is soft and a sauce like consistency
Season with black pepper and keep warm
In a large pot of boiling water cook pasta until al dente
Drain and toss through the warm sauce
Serve with lots of freshly grated parmesan and a rocket salad
